Ingredients:
4 salmon burgers, sautéed until crispy
4 falafel, sautéed or baked until crispy
6 multi-colored mini bell peppers, washed and dried
2 cups pea sprouts, cleaned and dried
6 roasted baby carrots
12 stalks asparagus, tossed in olive oil and broiled
6 Persian or English cucumbers, cut into wedges
1 cup Greek olives
1 cup hummus
1 cup chimichurri
1 cup roasted eggplant purée
6 grilled pita breads
Method:
Prepare all ingredients as directed—sauté or bake falafel, sauté salmon burgers until crispy, and broil the asparagus until lightly charred. Grill or warm pita breads and cut vegetables as needed.
On a large serving platter or wooden board, arrange all the ingredients in generous groupings.
Place the hummus, chimichurri, and eggplant purée in small bowls and nestle them into the platter.
Serve immediately with warm pita on the side. For make-ahead prep, cover and refrigerate the assembled platter. Remove from the fridge 20 minutes before serving to let it come to room temperature.
